Recipe Suggestions
You will need:
8 x flour tortillas
240g of Red Pepper & Jalapeno Houmous
4 x boneless, skinless chicken breasts, thinly sliced and seasoned
1 x tbsp of olive oil
½ lettuce, shredded
4 x medium vine tomatoes, sliced
½ cucumber, thinly sliced lengthways
4 x pickled gherkins thinly sliced lengthways
1 x lemon, cut into wedges for squeezing
Method
- Heat the oil in a large non-stick frying pan. Toss in the chicken and stir fry for 5-6 minutes until lightly browned and cooked through. Tip chicken onto a plate and set aside.
- Warm tortillas in oven or microwave (see manufacturers guide).
- To serve place some lettuce and a couple of sliced tomatoes onto each tortilla. Top with cooked chicken, sliced cucumbers and gherkins and a squeeze of lemon. Finish with a generous tablespoon of the Red Pepper & Jalapeno Houmous. Roll up and serve immediately.
